Colombia – Guaico Organic
Guaico specialty coffee is produced in the Nariño coffee region, where coffee plants grow in mineral-rich soils at high altitudes.
The cooperative, which brings together many coffee growers, was founded in 2011 to become the most reliable supplier of certified, high-quality green coffee. It has cooperatives in different coffee-growing regions of Colombia. After twelve years, they have extensive experience and have successfully worked with producers who share their values, convictions, and beliefs about their work. At both ends of the supply chain, they cultivate and work to build meaningful and close relationships, focusing on people, processes, and experiences.
This specialty coffee is made from a selection of bean varieties, including Castillo, Caturra, Colombia, and Typica, harvested from thirty-seven coffee-growing districts located in the Nariño region. This coffee-growing region ranks ninth in Colombia for its dedication to coffee production.
The Caturra coffee bean is distinguished by its acidity and light to medium body. It has less clarity and sweetness than its ancestor, Bourbon. Coffee plantations of this bean were first developed in Brazil, and these small trees can now be found in Colombia, Costa Rica, and Nicaragua.
On the other hand, the Castillo variety was created as a hybrid of Catimor, making it more resistant to coffee rust, eliminating the need for fungicides, and allowing farmers to ensure a stable harvest. The Typica variety, in turn, tends to thrive best at high altitudes, with stable climates and rich soils. This bean offers a clean, light-to-medium body that is both silky and refined, distinguished by a prominent sweetness reminiscent of honey, caramel, or milk chocolate. The citric acidity evokes fruits like orange, tangerine, or even green apple, but always with a delicacy that makes it very pleasant. This specialty coffee bean adds complex aromas with enveloping floral nuances.
The Colombian coffee bean variety offers a flavor profile with vanilla notes and a sweet, balanced finish. It has a medium-high acidity and a fragrance of caramel and chocolate.
Thanks to a medium roast, like the one we use at Camden Coffee Roasters, it achieves a medium body and a very mild bitterness, resulting in a clean and sweet cup. Its intense aroma of cocoa, caramel, and fruit like mandarin makes it an ideal beverage for both Italian and espresso brewing, and it pairs very well with milk.
