Honduras – Karum
This coffee has been grown and processed by an organization of small producers, a group of families from the coffee-growing region of Ocotepeque in Honduras. This region is characterized by hosting the Chortí culture, in whose language, descending from the Mayans, Karum means land.
The organization was founded in 1991 and is located in the Cordillera de Montecillos, Otatala, Masaguara, Intibucá Region, just 200km from Ocotepeque.
They are focused on organic and fair trade specialty coffee. They also have Biolatina and Fairtrade certifications and have a production capacity of 1,700 tons a year.
They can process the coffee in both ways, wet and dry, help with the negotiation of the sale to the fair or organic market, and provide financial support to the partner and also training.
The Ocotepeque coffee region is located in western Honduras, its population is around 100,000 inhabitants and this region has 16 coffee-growing districts, from which around 8,000 families benefit, cultivating almost 24,000 hectares of Arabica varietal coffee. Bourbón, Catuaí, Pacas, Lempira and Ihcafe 90.
As a curious fact, Ocotepeque ranks fifth as an important coffee region in the country.
This coffee that you are about to enjoy has been washed and left between 120 and 143 hours, in a controlled environment, and has gone through aerobic fermentation so that oxygen favors the creation of acetic acids, which are responsible for sour flavors.
Thanks to its medium roast, sweet and floral aromas will stand out, achieving a medium creamy body, with sweet notes of honey and dark chocolate.
It is ideal for filter preparations, as well as for Italian or portafilter.
