This specialty coffee has top-notch notes and quality, thanks to the mixed natural process it has undergone.
The process method undergone by this specialty coffee is a mixture of natural processes; in first place, the coffee cherries are received and classified by their ripeness. They are then left to dry outdoors using the sleeping bag technique. Then it is mixed with other beans that have been air-dried, where after receiving the cherries, they are left to dry slightly outdoors, and then completely dried in an industrial dryer.
The varieties that compose this specialty coffee a very special coffee are; Bourbon, Catuai, and Caturra. The Bourbon variety is the most widespread in El Salvador and gives it body and chocolate flavors, with intense aromas. The Catuai variety adds flavors of dried plums, hazelnuts, and creaminess. Caturra is a natural mutation of the Bourbon variety, providing sweetness, citrus aromas such as green apple, and a balanced acidity.
It is a coffee with a lot of sweetness, uniformity, and cleanliness in the cup. It has a medium acidity, as well as its body and creaminess.
It is ideal for Italian preparations, espresso, and filter.
