We repeat again with a coffee grown by the Salaverria family, who together are the owners of the three main growing areas around the Santa Ana volcano. This family has been producing several crops with the guidance and support of JASAL, a family business with more than one hundred years of experience, growing, processing, and exporting the best coffees in the country.
It is located in a mountainous and volcanic area that has earned the region the Cup of Excellence award for years. The ingenuity of the producers has made them use shrubs and small trees to protect the plantations from the strong winds that hit the area.
The Salaverria family puts a lot of effort into carrying out all the activities of the farm on time and likewise great care and attention to detail when harvesting the cherry, allowing it to differentiate itself significantly from other coffees. El Salvador is the smallest country in Central America, but it does not stop being a producer of high–quality coffee. This coffee has been grown in a prestigious region of El Salvador, and its beans are the result of experiments to resist possible diseases that affect coffee plantations, such as coffee rust.
The San Francisco farm processes its coffees at the El Molino mill, which forms a group next to the Santa Rita area. The plantation is known primarily for having an ideal microclimate for growing coffee and for its beautiful tall bourbon and pacamara trees.
A coffee with notes and flavors that are very characteristic of a washed process with aerobic fermentation, such as caramel notes, with hints of plum and orange. On the palate it has a lot of complex and balanced flavours, where you can find sweet aromas of brown sugar and toffee, providing a very clean cup.
This combination of fruity notes makes it an excellent coffee for a filter preparation in all its varieties, like Chemex, V60, French press, Cold brew, Aeropress …
