We repeat with a coffee grown by Don Joaquín Salaverria, owner of the three main growing areas around the Santa Ana volcano. This producer has been producing several harvests with the guidance and support of JASAL, a family business with more than one hundred years of experience, growing, processing and exporting the best coffees in the country.
It is located in a mountainous and volcanic area that has earned the region the Cup of Excellence award for years. The ingenuity of the producers has made them use shrubs and small trees to protect the plantations from the strong winds that hit the area.
Don Joaquín Salaverria puts a lot of effort into carrying out all the activities of the farm on time and likewise great care and attention to detail when harvesting the cherry, allowing it to significantly differentiate itself from other coffees. El Salvador is the smallest country in Central America, but it does not stop being a producer of high–quality coffee. This coffee has been grown in a prestigious region of El Salvador, and its beans are the result of experiments to resist possible diseases that affect coffee plantations, such as coffee rust.
The farm is called Villa Guadalupe which is in the area of Guadalupe with a field size of 15 hectares. The plantation is mostly known for having a perfect micro-climate for coffee plants and for its nice tall bourbon and pacamara trees.
A coffee with very characteristic notes and flavours of a honey process such as fruity notes, in this case, prune, with hints of blackberry and raspberry. In the mouth, it has a lot of clarity and definition with complex and balanced flavours, where you can find sweet aromas and a very clean cup.
This combination of fruity notes makes it an excellent coffee for both, filter preparation and espresso.
