This coffee has been grown on the Eldorado farm, which is managed by Laece França Faleiros, a producer and trader since he was 12 years old, who now has almost a thousand hectares of coffee, and one of the farms that stands out for producing extremely fine lots. It is located in the southwestern region of Minas Gerais, in Ibiraci, a place already known worldwide as Alta Mogiana Mineira. With a climate and altitude favorable to the production of highly special coffees, they work with the hope of taking the name of the region even further, thanks to hard work together with other producers. They always share their experiences, and all their efforts are geared towards increasing scores in natural batches. Finalist for 3 consecutive years in regional and national competitions, he shows that the best specialty coffees in Brazil come out here.
The process by which the beans have been dried has been in a natural way, which consists of leaving the coffee cherry once harvested, on beds to dry and ferment in the sun. It is a process in which these professionals have to be very careful since poor fermentation can ruin the grain and consequently its flavor.
Located in the state of Minas Gerais, which is favored by an average annual temperature of 22 °, it is one of the most productive areas in Brazil. It produces 30% of the total production in the country, most of which come from small farms, whose coffees have been valued and awarded on many occasions.
Thanks to the medium roast that we offer, this coffee manages to convey some chocolatey notes, with slightly honeyed aromas and fruits that are reminiscent of red apple. In the mouth, the protagonist is caramel, presenting a creamy texture with a medium body.
It is ideal for preparations with milk, as well as with Italian mocha or espresso.
