Brazil – Paiva

In the year 2000, a group of coffee growers with a visionary outlook on the specialty coffee market and the improvement of coffee cultivation in the region came together to establish the Campo das Vertentes Collective. With the support of Mr. Fernando Paiva, a pioneer in specialty coffees in the region since the 1960s, the producers acquired a warehouse and founded a cooperative. Over time, this infrastructure has evolved with state-of-the-art machinery and equipment. From its inception, the collective has been a driving force for the development of specialty coffees in the Campo das Vertentes region, actively participating in initiatives that promote progress and prosperity through the coffee business. Additionally, the cooperative is committed to social and environmental projects to ensure the long-term sustainability of coffee farming in the region. Currently, the collective is guided by principles of consistency, innovation, integrity, management, and transparency, constantly adapting to emerging market trends and using coffee as a vehicle to improve the lives of everybody involved.

The coffee-growing region of Campo das Vertentes is located in the heart of the state of Minas Gerais, approximately 200 km south of the city of Belo Horizonte. With an estimated population of 546,000 inhabitants and an area of 12,564 km², this region is home to 17 coffee-producing districts, including Ritápolis, Candeias, Oliveira, and São Francisco de Paula. Over 38,106 hectares of coffee plants are cultivated in these districts, with the entire production focused on the Arabica species and popular varieties such as Mundo Novo and Catuaí. Campo das Vertentes ranks thirteenth in total coffee production in the country.

The Campo das Vertentes Collective is a leading advocate for the promotion of specialty coffees and the advancement of coffee cultivation in the region. This cooperative strives to constantly adapt to new market trends, harnessing coffee as a powerful tool to enhance people’s lives. With a focus on quality and excellence, the Campo das Vertentes Collective continues to be a key player in Brazil’s coffee landscape.

This coffee has been processed using the method known as “Honey,” which falls between the washed method, widely used in South and Central America, and the natural process, popular in Brazil. While the washed process involves removing the mucilage during fermentation, and the natural process involves drying the coffee with the whole cherry, the Honey process includes pulping the coffee but not completely removing the mucilage. This means that the parchment is dried together with the mucilage, preserving the sweetness characteristics of natural coffee and delivering an exquisite acidity. Honey coffees are distinguished by their complexity and unique sensory experience.

If you are seeking a coffee with great complexity and a sensory adventure in every sip, don’t hesitate to explore the fascinating Honey coffees and discover the diversity of flavors that can delight your palate.

It is an ideal coffee to enjoy on its own, with milk, or even as a pour-over if you prefer sweet coffees with mild acidity.
